Banana bread with strawberries and milk kefir
Banana bread is a treat by itself but when you add some strawberries... it's pure decadence.
Fragrant, juicy, soft and delicious...and gluten free!
Serve it with coffee and enjoy!
Ingredients and preparation steps
3 larger ripe bananas
1 tablespoon of honey
6 tablespoons of melted butter
100 ml of homemade milk kefir
100 ml of kefir mixed with 1/2 teaspoon of baking soda
1 baking powder
1/2 teaspoon of cinnamon
200 g of white rice flour
100 g of buckwheat flour
a pinch of salt
handful of chopped pecans
handful of small strawberries
Blend together bananas, kefir, honey and butter and then pour mixture into a larger bowl. Add to the mixture kefir and soda, then add baking powder, flour, cinnamon and salt. Mix everything well, then add chopped pecans and strawberries. Pour the mixture into a mold lined with baking paper. Bake for about 50 minutes (depending on the strength of your oven) until the toothpick inserted in the middle of the bread comes out clean.
Remove from the oven and allow the bread to cool completely in the pan set on a wire rack.
