Gluten free fritters with milk kefir
What is December without fritters? All other months!
I don’t eat fritters often but the December is the ideal time to enjoy in them.
Ingredients and preparation steps
200 g of gluten-free flour
1/4 teaspoon xanthan gum
2 teaspoons cinnamon
1 teaspoon ground nutmeg
2 teaspoons baking powder
a pinch of salt
2 tablespoons cane sugar
150 ml of homemade milk kefir
tablespoon of rum
tablespoon of vanilla extract
Peel an apples, grate them and set it aside. In a deeper bowl, add the dry ingredients, mix them well, then add the wet ingredients and mix everything well again into a uniform mixture. Squeeze out the excess liquid from the grated apples, add them to the mixture and mix everything well. Heat the oil in a deep saucepan. Add as much oil as needed to fill the pot about 3 cm from the bottom. Using a spoon or ice cream scoop, take the dough and add it slowly to the hot oil. Bake the fritters until they get a golden yellow color on both sides. Serve with homemade jam, melted chocolate or simply sprinkle with a little ground sugar.
