Raw cake with homemade kefir



I have to admit that I simply love home kefir! The more I research about its benefits and the usage potential (this is the topic of the future article :), the more I’m thrilled! Homemade kefir may seem as a "boring food", but I believe I change your mind regarding boring food with delicious meal that are made with homemade kefir.

This time I made something completely different! In cooperation with Tvornica zdrave hrane I am bringing you a raw cake with homemade kefir that’s easy to make and refreshing treat for the upcoming warm and sunny days.

As I love the combination of green and purple colors, this raw cake is layered, but each layer can be served as a separate dessert (just double the ingredients).


Ingredients for the cake

Ingredients for the base:

- 100 g of pecans

- 200 g of almonds

- 100 g dates

Ingredients for the green layer:

- 300 g of homemade kefir

- 300 g of avocado

- juice from two limes

- 6 gelatine leafs


Ingredients for the Purple Layer:

- 200 g of homemade kefir

- 300 g of blueberries (fresh or frozen)

- 100 ml of coconut cream

- 6 gelatine leafs

Benefits of ingredients

This cake, besides being rich in probiotics from homemade kefir, is also rich in nutrients from other ingredients.


Pecans, as well as other nuts, are rich in protein and omega-6 unsaturated fatty acids and have a great nutritional value. Of all nuts, the pecans contains the most vitamin E, which is a natural antioxidant and protects cells from a number of possible damages. Apart from vitamin E, pecans are also rich in vitamin A, folic acid, calcium, magnesium, phosphorus, zinc and vitamin B.


Almonds are very caloric but also nutritious. Almonds contains high quality fats, proteins, carbohydrates, manganese, magnesium and vitamins E. Almonds are also a very good source of copper, vitamin B2 and phosphorus.


Dates are rich in vitamins A1, C, B1, B2, B3, B5 and B9 (folic acid) and calcium, magnesium, potassium, fluorine, sulfur and iron minerals. They are an excellent source of natural fibers and contains carotenoids lutein and zeaxanthin.


Blueberries are rich in manganese, C and K vitamins and dietary fibers. They are rich in potassium, calcium and phosphorus with high content of phytonutrients. Blueberries possess significant amounts of cholesterol-lowering pectin, and anthocyanins - one of the strongest antioxidants.


Lime is an excellent source of vitamin C and minerals - calcium, potassium and phosphorus.


Avocados contain a large proportion of good fats and numerous nutrients with about twenty essential vitamins. Avocados are rich in fiber, potassium, high in vitamin E, B and folic acid. Also improve absorption of nutrients and if you combine them with plant vegetables you will increase nutrition od your meal and vitamin A, D, E, K and carotenoid absorption.


To make a cake

Instructions for crust:

- Soak dates in water overnight

- Blend almonds, pecans and dates into homogeneous mixture

- Put the mixture in a baking tray in which you previously placed baking paper.

- Leave in the fridge while making green layer.

 

Instructions for green layer:

- Mix homemade kefir, avocado and lime juice in a blender.

- Soak 6 gelatin leafs in cold water for a few mins to soften. Then, squeeze the water from the gelatin with fingers and dissolve it in a separate bowl by steaming without water.

- When the gelatin is dissolved, add two tablespoons of avocado-kefir mixture and stir, then add the gelatin into remaining mixture by rapid stirring.

- Pour the mixture on a base and leave in the fridge for several hours (best overnight)

 

Instructions for violet layer:

- Mix homemade kefir, blueberries and coconut cream in a blender.

- Repeat the gelatin process.

- Pour the mixture on a green layer and leave cake in the refrigerator for several hours (best overnight).
